Mostly because I love love love these cookies.
I've made them twice and they're super good (haha) and I love them.

They're basically peanut butter-chocolate chip-oatmeal cookies.
Three of my favorites jam packed into one!
My Mom got this recipe from a co-worker of hers, and it's too awesome not to share.
Sharing is caring!
Makes 90-100 cookies (crazy.)
Ingredients
3 1/2 sticks butter
1 box brown sugar (~ 3 cups)
1 cup white sugar
4 eggs
1 jar (18 oz ~ 2 cups) crunchy peanut butter
4 cups flour
1 tablespoon baking soda
1 teaspoon salt
24 oz chocolate chips
2 1/2 cups chopped walnuts
3 cups old fashioned oatmeal
Instructions
Cream butter and sugars. Add ingredients in above order, stirring by hand. Roll into 1 inch balls and bake on an ungreased cookie sheet for 10 minutes at 350 degrees.
My notes and the calculations for the halved recipe after the jump.
I found that you really, really do not need to greasy your cookie sheet, so don't even bother. It's a waste of oil and flour.
There is so many fats from the butter and peanut butter that it literally slips off the pan.
I also bake them for a bit longer. I didn't get the golden brown color when I baked them for 10 minutes.
SO DELISH.
Since I hate mixing by hand, I halved the recipe and did it in the Kitchen Aid.
Our mixer had a bit of a hard time towards the end of the mixing process (mostly because I don't follow directions when it comes to "optional" fillings... oops!), but if you have a larger bowl, I think you'll be okay.

OMG YAY! And good on you for posting a halved version! Even if I made them for the office, I don't know if I could eat all of the cookies from the full version... @__@
ReplyDeleteBriana: They're so good I'm sure that they would go pretty fast (with a smidge of sharing), even if you made the full version. XD
